Enjoy these strawberry jam sandwich cookies chilled, straight from the fridge! A kids’ favourite and special treat for tea time!
The weather has been hot recently, and the kids really love some chilled treats for their tea break sometimes.
These strawberry jam sandwiched cookies were great for them! We enjoyed having the cookies chilled, right out from the fridge, for some cool sweet treat. The best thing is that these cookies are really easy to make too. Let’s see how we can do that!
Is It Easy To Make These Strawberry Jam Sandwich Cookies?
Yes! Basically, you’ll just need to make a basic vanilla cookie dough, with the usual creaming method. Let the cookie dough chill slightly in the fridge before rolling and cutting out the dough with a usual round or scallop edge cutter.
For half of the round dough, we will be using a small cutter to cut the middle. These will be the top of the sandwich cookies. After you get the cookie dough out from the smaller cutter, you can place the cookie dough in another baking tray and bake separately if you wish. I didn’t bake the center portion together with the main cut-out dough because it is smaller, and probably will take lesser time to bake. Alternatively, you can also mix the dough all back together to continue cutting the larger size ones.
After the cookies are all baked, let them cool completely on a cooling rack. Drop a dollop of jam in the middle portion of cookie, then place another cookie (with center cut-out) on top, and it is done!
How Do These Cookies Taste Like?
My kids and I enjoy these cookies straight out from the fridge! The cookie itself is not sweet, so it tastes perfect, paired with the slightly sweet store bought strawberry jam.
Just note that the cookies will soften slightly over time, due to the moisture from the jam. But I find it still delicious enough!

What Ingredients Do I Need?
- Unsalted Butter: For the creaming method, remember to let the butter come to room temperature slightly – when pressing against the cut butter, your finger tip should be able to make an indentation easily. Do not let it soften too much or melt in the hot weather.
- Icing Sugar & Caster Sugar
- Egg Yolk
- Vanilla Extract
- Top or Cake Flour
- Ground Almond: Don’t miss out on the ground almond as it adds fragrance to the cookies.
- Milk Powder: Get the milk powder for baking use. It is also optional – you may want to skip this if you do not have it.
- Strawberry Jam: I used store-bought strawberry jam here, and the cookies are still not overly sweet! You can choose any jam of your choice. Try to get jam that are not too watery.
How Can I Store These Cookies?
You might want to store these strawberry jam sandwich cookies in a container, in the fridge, if you are in a humid country.
These strawberry jam sandwich cookies will keep well for up to 3 days in the fridge. Beyond that, the cookies will gradually turn soft due to the moisture from the jam. So if you like to enjoy them for a longer period, leave the cookies unfilled and they keep well for up to 2 weeks in airtight container, in room temperature. Fill them with jam 1 day before serving.
The cookie dough also freezes well if wrapped double with cling wrap and aluminum foil. To thaw, simply leave in fridge overnight.
