A light and refreshing Chinese dessert soup that is usually served in hot weather, to soothe and nourish the throat.
This is an old recipe that I have tried in 2015, and am still loving it. Updating this post with newer pictures!
The apple snow fungus sweet soup is a Chinese dessert soup that is believed to be able to help dispel “heatiness” when the weather gets too hot. It is also said to be soothing for the throat.
How to Cook This Apple Snow Fungus Sweet Soup?
It is really simple to cook this sweet soup! You will just need these ingredients:
- 2 small red apples
- 1 snow fungus: I am using unbleached dried snow (white) fungus from RedMart. There is also fresh snow fungus in supermarkets, just that it is rarely seen and usually more expensive. If you are using the dried one, you will have to soak it. If using the fresh one, then you do not need to soak.
- Red dates
- Dried longans (optional)
To boil this sweet soup, cut up the apples and snow fungus, boil together in a pot of water with some red dates. When the sweet soup is almost ready, we will add some rock sugar for a slightly sweeter taste.

How Does This Sweet Soup Taste Like?
This sweet soup has a very fruity flavor, thanks to the apples in the soup. A very light and refreshing dessert, especially nice in hot weather! You can have it hot or chilled.
I did not add a lot of rock sugar in this sweet soup. So taste the soup before serving, and add more rock sugar if preferred.
