Easy Strawberry and Cream Recipe In Cups
This no-bake Baileys cheesecake recipe was provided in the Baileys pack that was sent to me. I really like how easy and hassle free this recipe is, and I am sure you will too!
For this recipe, you do not need to worry about un-molding the cheesecake. Since they are made in cups, you can eat them straight from the fridge like that! Due to the liquor in the Baileys Strawberry & Cream, you may find a slightly bitter aftertaste if you were to eat it on the same day. I find the flavors develop best overnight, so do make the cheesecake 1 day in advance. Chill in the fridge overnight.
The recipe below makes a nice serving for two, which would be great for a last minute dessert, for lunch or dinner date at home.

What Ingredients Do We Need?
- Digestive Biscuits Or Lotus Biscoff Biscuits: You can use either Digestives or Biscoff, but I prefer Lotus Biscoff for a stronger cinnamon taste.
- Unsalted Butter: Melted butter will be added into crushed biscuits to make the cheesecake base. You can melt the butter over a pot of simmering water or in the microwave.
- Cream Cheese: Soften the cream cheese slightly (about 3 mins or so) so that it is easier to mix together with the icing sugar.
- Icing Sugar
- Whipping Cream: Use dairy whipping cream (at least 35% fat)

- Fresh Strawberries
How Does The Baileys Strawberry Cheesecake Taste Like?
The cheesecake has a subtle strawberry milkshake taste, and I particularly enjoyed it together with the layered texture of biscuit and fresh cut strawberries. I’m happy that it is not overly sweet! So you don’t need to cut the sugar any further. Oh, do dust some icing sugar for extra sweetness on top before serving!
Is It Easy To Make The Cheesecake?
Absolutely, it is quite easy and a great idea for a last minute dessert! It is like a shortcut no-bake cheesecake method, and you do not need a lot of preparation time.
I guess the only tricky part in the recipe is whipping of dairy cream. I would suggest to whip the cream in a metal bowl. Weigh the cream in a metal bowl and chill in the fridge for about 15 mins before whipping on high speed. The cold cream will then be more stable to whip, and less prone to breaking down while whipping. Also, ensure your whisk or beaters are clean, free from grease or oil.

Ingredients
Biscuit Base
- 60g Digestives Biscuits or Lotus Biscoff Biscuits, Crushed
- 30g Unsalted Butter, Melted
Cheesecake Filling
- 120g Cream Cheese, Softened slightly
- 20g Icing Sugar
- 60ml Whipping Cream
- 25ml Baileys Strawberries & Cream
Layer
- 20 – 30g Digestives Biscuits or Lotus Biscoff Biscuits, Crushed
- 4 – 5 pcs of Fresh Strawberries, Diced
Topping
- 2.5 tsp Icing Sugar
Instructions
Biscuit Base
- Mix melted butter and crushed biscuits together. Place and fill into bottom of cups. You can use the end of a rolling pin to make them more compact.
- Leave to set in the fridge till ready for use.
Cheesecake Filling
- In a mixing bowl, add together cream cheese and icing sugar. Using a spatula, mix till well combined and smooth.
- Stir in Baileys Strawberries & Cream.
- In another bowl, whip the whipping cream on high till thickens and reaches firm or stiff peak.
- Fold whipped cream into cream cheese mixture till well combined. It should look thick and smooth.
- Pour 1/4 of mixture into prepared cup, and layer with crushed biscuits and fresh strawberries before topping with another 1/4 of mixture. Repeat for the other cup.
- Chill in fridge for at least 6 hours, or preferably overnight for flavors to develop.
Decorate / Topping
- Before serving, dust with icing sugar. You can also serve with some whipped cream and fresh strawberries if you prefer.

You can crush the biscuits using the end of a rolling pin, or process the biscuits till fine in food processor. I left them slightly chunky for a more contrasting texture.
