These easy, no-bake Baileys Strawberry Cheesecake in cups, feature a pleasant strawberry milkshake flavor! Make this easy, small batch cheesecake for two, for a cozy lunch or dinner date at home!
Many apologies for this super delayed post, which has been sitting in my Draft folder for so long!
I received a bottle of the Baileys Strawberries & Cream last month, so that I can try my hands at making this strawberry cheesecake!
Easy Cheesecake In Cups
I enjoyed how easy this no-bake recipe was, which was provided together with the Baileys pack that was sent to me.
You don’t need to worry about unmolding the cheesecake, because they are made in cups, and you can eat them straight from the cups! Due to the liquor in the Baileys, you may find slightly bitter taste if you were to eat on the same day. I find the flavors develop best overnight, so do make the cheesecake a day in advance.
The recipe below makes just nice for two, which would be really great for a lunch or dinner date at home.
Baileys Strawberries & Cream
You can imagine the dreamy flavors of strawberries and vanilla together, spiked with Baileys Original Irish Cream!
This makes a super yummy grown-up sweet treat that has a nice, sweet strawberry milkshake taste. What’s even better, you can now shop for Baileys Strawberries & Cream from the comfort of your home, from S-Mart!
What Ingredients Do We Need?
- Digestive Biscuits Or Lotus Biscoff Biscuits: You can use either Digestives or Biscoff, but I prefer Lotus Biscoff for a stronger cinnamon taste.
- Unsalted Butter: Melted butter will be added into crushed biscuits to make the cheesecake base. You can melt the butter over a pot of simmering water or in the microwave.
- Cream Cheese: Soften the cream cheese slightly (about 3 mins or so) so that it is easier to mix together with the icing sugar.
- Icing Sugar
- Whipping Cream: Use dairy whipping cream (at least 35% fat)
- Baileys Strawberries & Cream
- Fresh Strawberries
How Does This Baileys Strawberry Cheesecake Taste Like?
The cheesecake has a subtle strawberry milkshake taste, and I particularly enjoyed it together with the layered texture of biscuit and cut strawberries. I also like that it is not very sweet at all! So do not cut the sugar, and remember to dust some icing sugar on top before serving.
Is It Easy To Make The Cheesecake?
Absolutely, it is quite easy! You do not need a lot of preparation time. Just be careful when you are whipping the dairy cream.
I would suggest whipping the cream in a metal bowl. Weigh out the cream in the bowl and chill it in the fridge for about 15 mins before whipping on high speed. The cold cream will be more stable, and less prone to breaking while whipping. Also, ensure your whisk or beaters are clean, free from grease or oil.
