Do you like durians? 😉
This is a muffin that is in between a soft and dense texture. Hubby commented that the flavour developed more overnight. I don’t like durians, but had to make these because he love durians haha! And for me to know how it tastes like, I had to eat some myself (yucks, cannot tahan the smell hahaha).
Though I am not someone who love super sweet stuff, I find this muffin not sweet enough without the durian flesh added in the middle. I dropped 1 tsp of the durian flesh in the muffin, which I think I could increase to 1.5 tsp next time 🙂
Durian Muffins – Recipe adapted from MNYFoodtalk
240g self raising flour, sifted
80g castor sugar
2 eggs – A size, lightly beaten
180ml fresh milk
120g melted butter, cooled
250g durian flesh, mashed
12 to 15 tsp of durian flesh, mashed
1. Add self raising flour with castor sugar in a mixing bowl. Lightly mix with hand whisk.
2. Add in eggs, melted butter and milk into mixing bowl. Stir and mix all ingredients with hand whisk in same direction. (Mix until mixture are just combine, do not over mix)
3. Stir in 250g durian flesh. (Do not over mix)
4. Scoop mixture into muffin cup. Fill the muffin cup with some batter, drop 1 to 1.5 tsp of durian flesh, and cover with more batter. Bake at preheated oven (180C) for 20-25mins.
